Beer Cheese

2 lb block Velveeta cheese

1 can beer

Cayenne Pepper

Louisiana Hot Sauce

1 pt mayonnaise

Olive oil (optional)

 

This recipe I use a food processor, there is another where you use a mixer, slowly melt the cheese in a microwave to avoid burning then use same steps below.

Cut the cheese into small blocks and put in processor with mayo, 1 tbl olive oil and blend till mixed. Slowly pour beer in while blending, when cheese texture is creamy add Cayenne pepper to taste. I like to see flakes of pepper fairly close, use more or less to taste. Add Louisiana Hot Sauce again to taste 1 tbl spoon is mild but this is to taste, I like it on the hot side. Thoroughly blend and serve. Note the longer the cheese sets the hotter it gets. Enjoy.

 

 

Hero Pizza Burgers

 

1 1/2 lb ground beef                                                          1/3 c catsup

1 small can evaporated milk                                             1 tbsp mustard

2 eggs                                                                                 3/4 c grated cheese

1 tsp salt                                                                             1/2 c chopped onions

1/2 tsp pepper                                                                    1 loaf French bread sliced

 

Mix all ingredients together, spread on slices of bread and bake at 350 for 15 to 20 min

makes 10 -12 servings

 

Spoon Bread

Sift Together

1 tbs sugar

1 cup cornmeal

1 tsp baking powder

1/4 cup plain flour

1 tbs salt

stir in 1 cup of milk - 1 beaten egg

Beat well, put 2 tablespoons butter in an 8 x 8 baking dish. Pour batter in dish. Pour 1/2 cup milk over all. Bake 45 min to 1 hour at 375.

 

 

 

Heavenly Ribs

 

4 lbs short ribs              1/8 tsp pepper

1 large bay leaf             3/4 cup catsup

1 tbsp brown sugar       1/2 cup water

1/2 tsp ginger                1/4 cup soy sauce

1 tsp dry mustard           2 tbsp lemon juice

1 1/2 tsp salt                   1 onion sliced

Brown ribs on all sides, drain. Cover tightly cook slowly 1 1/2 hours and drain.

Combine remain ingredients, add ribs cover tightly and continue cooking slowly 1/2 hour. Throw away bay leaf. Add water to liquid to make 2 cups and add flour, if desired to thicken, garnish dish with fresh lemon slices. Enjoy!!

 

 

Jalapeno Deviled Eggs

6 hard boiledeggs

1/4 cup cheese spread

2 tbsp chopped jalapeno peppers

some paprika

 

Cut eggs in half length wise and remove yolks and mix with cheese, peppers and a dash of salt. Refill white and sprinkle with paprika.

 

 

Mexican Casserole

 

1 Lb Ground beef       1 1/2 c. whold kernel corn

1 pkg taco seasoning mix      1 pkg corn bread mix

2 c. canned tomatoes                                             

 

Brown beef until crumbly stir in dry seasoning mix. Add tomatoes

and corn, bring to a soft boil stirring frequently and pour into

2 quart casserole dish.                                                                  

Carefully top with corn bread batter -- bake at 400 approx 15 min

or untill brown.                                                                             

 

 

 

Crock Pot Baked Beans

 

2 large cans of pork and beans             3 tbs mustard

(1 lb 12oz ea)                                       6 slices bacon

 2 cups chopped onions                                  1 cup brown sugar

2 cups chopped green peppers               1 cup kethup



Mix all ingredients in crock pot the night before needed, cook on high, at bed time turn to low. The next morning turn back to high and cook until ready to serve stirring several times.

 

 

Hamburger Casserole

 

1 lb ground beef

1 10oz tomato soup

1 8oz tomato sauce

diced onions

diced celery

about 3 c. noodles cooked

 

Brown meat with onions and celery; drain.

Add soup and sauce. Simmer for a few minutes.

Mix with noodles and place in a 1 1/2 to 2 qt casserole dish

Bake at 350 for 45 minutes

 

 

 

 

Zero Soup

1 head cabbage                                         6 small onions

1 whole celery stalk                                 1 qt tomato or V8 juice

1 green pepper                                         4 beef bouillon cubes



 

Chop cabbage, celery, pepper and onions. Put in large kettle, then add juice and cover with water. Cook until tender then add bouillon cubes for flavor.

 

Easy Cookies

1 16 oz jar peanut butter crunchy or creamy

1 16 oz jar marshmallow cream

1 pkg graham crackers

 

Mix peanut butter and marshmallow creme together until blended equally. Crush graham crackers until they are fine. Make small balls out of your mixture and roll in graham cracker crumbs. Eat as is or freeze.

 

 

Sour Cream Rolls

 

1 Cup Sour Cream

1 Stick Butter Melted

1 Cup self-rising Flour

 

     Combine in bowl and stir until well mixed. Bake in tiny lightly greased muffin tins at 450 for 15 minutes. Makes approximately 24 tiny rolls.

 

 

 

 

Apple Bake Crunchy

 

¾ cup oats                                    1 tsp nutmeg

¾ cup flour                                    1 stick butter cubed

2/3 cup brown sugar                       Honey

1 tsp cinnamon                               4 med to large apples cored

 

 

Wash and cut bottom of apples slightly to make a flat base. Cut top of apples like a pumpkin, cut out core to make a hole. Fill hole with honey. Mix all ingredients with fingers it will be a loose mixture. Cover apples with oatmeal topping pressing into hole to make a smooth top. Bake in pie pan at 350 for 40 minutes. Apples will be soft to squeeze when done.

 

 

 

Southern Style Corn Pudding

 

1 can cream style corn 1 cup melted butter

1 can corn 2 eggs

1 cup sour cream 1 T. Sugar

1 box jiffy corn muffin mix

 

Combine ingredients together and bake in a greased pan at 350 for 45 minutes.

Easy Fruit Dip

 

You won't believe how simple and good this is

 

1 8oz container of sour cream

1 package strawberry Kool-Aid

 

Mix well and serve with fresh sliced fruit and melon. You can use any jelly flavor.

Nola's Chicken Salad

8 chicken breast’s

2 lb red grapes

celery – to taste

mayonnaise

Boil chicken breasts and let cool

Chop up grapes, celery & chicken

Mix with mayonnaise until creamy

Serve on a lettuce leaf with club crackers or other fruits

 

 

Easy Pimento Cheese

 

3 Ib. Velveeta

1 pt. mayonnaise

4 oz. jar pimentos

4 oz. jar pimentos


Set Velveeta cheese log out to soften. When cheese is room temperature, cut into small pieces. Put cheese pieces into a large bowl and add mayonnaise, pimentos and mix thoroughly. Great on sandwiches! Also good on crackers or with vegetables.

 

Dieter’s Orange Kiss Me Cake

 

1/3 cup butter or margarine, softened                     2 tbs baking powder

1/4 cup firmly packed brown sugar                        1/2 tsp soda

1 egg                                                                     1/2 tsp orange extract

2 tsp Pillsbury liquid sweet 10                                2/3 cup unsweetened orange juice

1 ¼ cup Pillsbury all purpose flour                         1/3 cup raisins

                                                                             2 tbsp finely chopped pecans or walnuts

Oven 350 – 8 inch cake

Grease 8 inch square or round layer pan (also good as cupcakes).

In large mixer bowl combine butter, brown sugar, egg and sweet 10. Beat 2 minutes at high speed, scraping bowl occasionally. No need to sift flour; measure by lightly spooning into cup and leveling off. Add flour, baking powder, soda, orange extract and orange juice. Blend at low speed until moistened; continue blending at fairly low speed until well combined, about 1 minute. Batter will be fairly thick, stir in raisins.

Pour batter in prepared pan spreading to edges. Sprinkle with pecans. Bake at 350 for 25 to 30 minutes until light golden brown.

Potato Soup

 

10 potatoes diced

5 cups of water

1 chopped onions

2 lb velveeta cheese

Cook potatoes and onions until done, add Velveeta and stir until melted.

Great Served with Cornbread

 

 

HOLIDAY MEATBALLS

(MAKES 8-10 SERVINGS OR 60 VERY SMALL MEATBALLS)

2 LBS. GROUND BEEF

2/3 CUP CHOPPED ONION

2 EGGS, SLIGHTLY BEATEN

1 CUP BREAD CRUMBS

2 TEASPOONS SALT

¼ TEASPOON PEPPER

SAUCE

12 OZ. BOTTLE CHILI SAUCE

10 OZ. JAR GRAPE JELLY

½ CUP KETCHUP

1 TEASPOON WORCHESTERSHIRE SAUCE

1. COMBINE GROUND BEEF, EGGS, BREAD CRUMBS, SALT AND PEPPER. FORM INTO 60 SMALL BALLS. PLACE ON BAKING SHEET.

2. BAKE AT 400 DEGREES FOR 15-17 MINUTES. PLACE IN SLOW COOKER.

3. COMBINE SAUCE INGREDIENTS IN SAUCE PAN. HEAT. POUR OVER MEATBALLS.

4. HEAT ON LOW UNTIL READY TO SERVE.

2. BEAT TOGETHER EGGS, MILK, SALT AND PEPPER. POUR OVER MIXTURE IN SLOW COOKER.

3. COVER. COOK ON LOW FOR 8-9 HOURS.

Nola's Belly Buster Chili

 

 

 

 

 

3 lbs. ground beef

3 chopped onions

3 packages chili mix

3 cans of stewed tomatoes

3 cans of chili hot beans

3 cans of V8 juice

spaghetti (if desired)

 

Brown ground beef and onions. Stir in chili mix. Squish up the stewed tomatoes and add to mixture. Stir in chili hot beans. Add V8 juice. Add spaghetti if desired. I use angel hair spaghetti because it stays thin when cooked.

 

This is great for cold winter nights and is even better warmed up later. This recipe will feed approximately 25 hungry family members. Enjoy!
